POLJIČKI SOPARNIK

We will welcome you to the demonstration of preparing soparnik – a dish, its origin are closely linked to the previous Republic of Poljica. Soparnik has also been included on the Croatian list of protected cultural heritage and it received a protected geographical indication.

Soparnik is a fasting dish made of dough, Swiss chard (mangold), onion, and garlic. In the past, it was prepared during the Lent time on Great Friday, Christmas Eve, or on the day preceding the All Saints’ Day. Today, it is served during special occasions.

For the preparation, you need two small-round tables, on which you thinly spread out the dough made from wheat flour. It is spread with the filling made of stripped mangold mixed with salt, onion, garlic, and olive oil that is topped with the other section of the dough. The tricky part is to transfer the dough from the wooden table into the oven, as it can easily be crushed or deformed. Such pancake is sprinkled with hot ash to ease the baking process.

After the demonstration, we will be able to taste this delicacy with a glass of wine.

The programme includes:

– Demonstration of preparing soparnik, including presentation of its history.
– Tasting soparnik with a glass of home-made wine.
